Wow ...

I've heard ppl are stocking up on / aiming to sell copper bars come BC.

Now, I've no desire at all to unlearn my main prof (enchant / tailor now at 300, and btw sniggering at all the new enchanters giving away enchants now their mules no longer work ), but am seriously considering a dranei alt, and running it through Jewelcrafting.

And sticking with it - not just visiting the start zones.

BUT - Is it worth it? Is JC so different from enchanting? Do the two stack?

The two stack, yes.

If it's worth it? Hell i dunno. It's just another trade skill, nothing special really, although it's nice to be able to make gems and put them in sockets. Personally I'm gonna drop smithing on my main for JC, but then again, smithing is a shitty profession especially for a clothie You can check here if you wanna know what you can make as a JC.
